Profiteroles

In the classic French tradition, profiteroles are filled with vanilla Ice Cream and topped with chocolate sauce, but feel free to use any flavor ice cream or pudding or Whipped Cream, and any sauce. Chocolate Sauce is wonderful, but you could also make any fruit into a lovely sauce by just pureeing it in a blender or food processor. You can also add any fruit along with the creamy filling.

To make the profiteroles, make batch of Cream Puff Dough. Slice the cool puffs around the "equator". Remove any excess dough in the center so you only have a shell. Spoon in the creamy filling, then place on a plate in a pool of sauce, or drizzle the sauce on top.
