Oatmeal Harvest Cookies

This cookie is made with whole wheat flour and is chock-full of fruits, nuts, and spices.

makes about 2 dozen

1/2 cup butter
1/2 cup date sugar
1 egg
1 teaspoon vanilla extract
1/4 cup applesauce
1 cup whole wheat pastry flour
1/4 teaspoon baking soda
1/4 teaspoon salt
pinch allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/4 cups oatmeal
3/4 cups dried raisins and chopped dates
3/4 cups walnuts

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, with an electric mixer, cream together the butter and date sugar.
  3. Add the egg and mix until blended.
  4. Add the vanilla and applesauce and mix well.
  5. In a separate bowl, combine the flour, baking soda, salt, and spices. Add to butter mixture and mix well.
  6. Add the oatmeal, fruits, and walnuts, and fold in by hand.
  7. Drop by tablespoons 2 inches apart onto a baking sheet lined with parchment paper or a silicone baking sheet. Flatten with your fingers.
  8. Bake about 15 minutes or until slightly browned.
  9. Transfer to a wire rack to cool.
