Oatmeal Harvest Cookies
This cookie is made with whole wheat flour and is chock-full of fruits, nuts, and spices.
makes about 2 dozen
1/2 cup butter 1/2 cup date sugar 1 egg 1 teaspoon vanilla extract 1/4 cup applesauce 1 cup whole wheat pastry flour 1/4 teaspoon baking soda 1/4 teaspoon salt pinch allspice 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 1/4 cups oatmeal 3/4 cups dried raisins and chopped dates 3/4 cups walnuts - Preheat oven to 375 degrees F.
- In a large bowl, with an electric mixer, cream together the butter and date sugar.
- Add the egg and mix until blended.
- Add the vanilla and applesauce and mix well.
- In a separate bowl, combine the flour, baking soda, salt, and spices. Add to butter mixture and mix well.
- Add the oatmeal, fruits, and walnuts, and fold in by hand.
- Drop by tablespoons 2 inches apart onto a baking sheet lined with parchment paper or a silicone baking sheet. Flatten with your fingers.
- Bake about 15 minutes or until slightly browned.
- Transfer to a wire rack to cool.
