Crisps

Fruit crisp is a delightful dessert you can enjoy all year long, from summer peaches and plums to winter apples and pears.

The sweet and crunchy topping is a perfect compliment to soft cooked fruit. Choose ripe fruits for sweetness without additional sugar.

Crisp toppings are generally of two types. A simple butter-flour-spices mixture is often used, some also contain oatmeal or nuts.

I like to include chopped nuts in my crisp topping because the added protein and fat in the nuts helps to balance out the sweet, resulting in less of a blood sugar spike.

I also make my crisps in three-inch ramekins (you can also use custard cups), rather than in a big pan. These hold a nice-sized peach or apple. By making individual servings, I'm not tempted to have seconds!

Warm crisps are delicious served with cream, whipped cream, or ice cream.
