I am looking into safe countertops as well but because I'm homebound I shopped for safe materials for flooring and countertops online. I found a place that sells a good deal of these materials and are into green and less so safe for the individual, but they do pay attention.
Re countertops they said it isn't a problem with many materials (other than cost) and the cheapest they said was bamboo and also something called "paperstone." But they did say that unlike with floors countertops usually need glue in some places, at seams, even though they don't need an overall adhesive. I now will have to get the MSDS info on the adhesives, though they did say they did smell while being applied, which is no guarantee that when the smell goes away they are safe. (Debra?)
When I find out I'll post. But the paperstone is made of left-over sources of paper products. There's more but I don't have it at hand. I will also give cost. I'd like to hear about Lowe's products re cost of materials.
I am sure this company is not the only company that sells paperstone. Google. But their website is www.environmentalhomestore.com. I think their contractors (installers are local, thus around Philadelphia, but they have an 800 # and you can call) Buying materials from afar increases cost for shipping. Don't call on Monday. The owner takes that day off, answers his phone when he's driving and kids are howling and it is nerve shattering!

I looked at paperstone when I needed countertops for my kitchen, but the price was prohibitive for me. You also need to consider shipping costs if you are ordering online, which are astronomical for countertops because of the weight. But I liked the sample of paperstone that I saw, which was at a Home Depot Expo store.
Ultimately, we installed granite because we got a great deal on it--$27 a foot installed. With the housing market down, there are a lot of materials installers with inventory who are now hungry for work. So check around locally for the best price.
